Hello. Here is how I understand the question: You want to know the difference between the five different routes.
So: There is no combined "Jill-and-Bella route." It is either Jill or Bella. You need a specific "Chick status" (at least at the start of the game) to get one of them as a partner. Perhaps by "Jill-and-Bella route" you are referring to this "Chick status"?
The routes are as follows: 1. Sage, 2. Josy/Maya, 3. Jill, 4. Bella, and 5. "Others." The main story remains more or less the same but varies depending on the girl you choose. Your choice grants you access to specific locations that wouldn't be available on other routes.

Regarding "delaying the decision": The first two to four episodes are the most important. You need to actively work toward the girl you want during this time; otherwise, you won't be able to get her later. For Josy/Maya, Jill, and Bella, a "Chick status" is required for this—in addition to performing the appropriate "Chick actions" when speaking directly to them. For Sage and the "Others" route, both "Dick" and "Chick" actions work.

SPOILER: At the end of Episode 9, you have to choose someone. Every girl you have a good relationship with will be available in the selection menu (including the "Other" option). After Episode 9, you can no longer have sex with other characters—except on your chosen route (barring certain risqué scenes or the "Other" route). But take care: if u have several romances at the same time, every not-choosed-one will be mad at you (after Episode 9). To prevent that, only go for one girl. The only problem is Bella, whatever you do, if you choose Bella, Jill will be mad at you.
